Gardenia yellow is a natural edible pigment extracted and refined from the ripe fruits of Gardenia jasminoides. Classified as a carotenoid-type natural colorant, its main colouring constituents are crocin and crocetin (note: not anthocyanin). The product exists in multiple physical forms to satisfy diverse industrial application requirements.
The solid grade normally appears as yellow to orange-yellow crystalline powder, while liquid or paste variants are also commercially available. Liquid gardenia yellow shows orange-yellow to deep yellow appearance, featuring good water solubility and moderate heat resistance. It maintains stable colour within a suitable pH range, with bright and pure yellow tone, and exhibits good compatibility with most food raw materials and other natural colorants.
As a clean-label natural colour additive, gardenia yellow is widely applied in beverages, candies, cakes, preserved fruits, jelly, seasonings and other food fields. It can also be used in cosmetics and daily-care formulations.
The manufacturing process includes crushing gardenia fruits, water extraction, impurity filtration, purification, concentration and drying.
