Ammonium Alginate, CAS#9005‑34‑9, is a natural‑derived hydrocolloid gum, namely the ammonium salt of alginic acid extracted from brown seaweed. As a water‑soluble polysaccharide, it dissolves readily in cold water without heating requirement to produce highly viscous, uniform aqueous solutions, while it is insoluble in organic solvents.
It performs multiple core technical functions within formulation systems, primarily acting as a thickener, stabilizer, film‑former and texture modifier. When dispersed in aqueous media, it builds controlled viscosity, improves suspension performance, prevents ingredient separation, and delivers smooth texture for finished products.
In the food industry, Ammonium Alginate has wide application scenarios. It is commonly applied in bakery fillings, gravies, sauce systems, dessert toppings and salad dressings. It helps avoid water separation, maintains consistent texture during storage, and enhances mouth‑feel of fillings and toppings.
