Beet Red is a natural water‑soluble red‑purple colourant extracted from edible red beet roots. It commonly presents in multiple commercial physical forms, including red‑purple to dark‑purple liquid, solid blocks, fine powder, and thick paste.
In terms of solubility performance, Beet Red shows good miscibility in polar aqueous systems. It is readily soluble in water, milk, 50% ethanol‑water solution and aqueous propylene‑glycol solution. It demonstrates only slight solubility in absolute ethanol, pure propylene glycol and acetic acid. Meanwhile, it is practically insoluble in non‑polar organic media such as ether, acetone, chloroform, benzene, glycerol and various vegetable or mineral oils.
This natural pigment is sensitive to external environmental factors. Its colour stability is affected by pH value, temperature, light exposure and metal ions. It maintains a bright red‑purple shade under neutral to weakly acidic conditions; colour fading may occur upon prolonged heating, intensive light irradiation or contact with certain heavy‑metal ions.
Widely applied within the food‑processing industry, it is commonly used for colouring beverages, confectionery, dairy products, jams and ready‑to‑eat foods. It belongs to natural food colour additive, and complies with relevant food‑grade specification requirements.
