Indigo (CAS# 482-89-3) is a traditional vat dye with more than 3,000 years of history. During the Warring States period, Xun Kuang wrote the well-known line “Blue is extracted from bluegrass, yet surpasses bluegrass in color”—a saying that comes from the indigo dyeing craft of that time. Here, “qing” means the cyan color of the dyed product, and “blue” is the bluegrass plant used to make indigo. What’s more, indigo was already widely used long before the Qin and Han dynasties.

Indigo can be used as a food colorant, and national rules specify where it can be used and how much is allowed. The maximum dosages for different foods are:
Red and green silk (for food decoration): No more than 0.02 g/kg of indigo can be added.
Fruit juice (or flavored) beverages, carbonated drinks, prepared wines, candies, pastries, color-coated foods, dyed canned cherries (decorative), and green plums: The maximum allowed amount is 0.10 g/kg.
Pickled side dishes: The maximum amount of indigo that can be added is 0.01 g/kg.
