Product Description of Dimethyl Dicarbonate (CAS No.: 4525-33-1)
Dimethyl dicarbonate (DMDC), also known as Vigorin, is a fruit juice beverage preservative approved by national food additive standards (INS No. 242).
At room temperature and even under low-temperature conditions, DMDC shows strong antimicrobial activity against a broad range of contaminating bacteria commonly present in fruit juice beverages. Its preservative effect is closely linked to its ability to modify and inactivate key enzyme proteins in microbial cells, thereby effectively preventing beverage spoilage.

Compared with traditional physical sterilization technologies, DMDC offers lower processing costs, simple operation, and high safety, while maintaining the original taste, aroma, and color of the beverage. Consequently, it has become a key focus in the development of advanced non-thermal sterilization technologies.
